For the Pasta and Shrimp:
- 12 oz linguine (or your preferred pasta)
- 1 1/2 lbs uncooked extra-large shrimp (peeled and deveined)
For the Sauce:
- 3 tablespoons extra virgin olive oil
- 3 tablespoons unsalted butter
- 4 garlic cloves, minced (about 4 teaspoons)
- 1/2 cup dry white wine (or low-sodium chicken broth)
- Salt and freshly ground black pepper, to taste
- 1/8 teaspoon red pepper flakes (optional, for a spicy kick)
- 2 tablespoons fresh lemon juice
- 1/4 cup chopped fresh parsley
Instructions
- Cook the Pasta:
- Cook linguine according to package instructions. Reserve 1/4 cup of pasta water before draining, in case you need to thin the sauce later.
- Prepare the Sauce:
- In a 12-inch skillet over medium heat, melt butter with olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.
- Simmer the Sauce:
- Pour in the white wine (or chicken broth) and simmer for 2–3 minutes until the liquid reduces by half.
- Cook the Shrimp:
- Add shrimp to the skillet in an even layer. Season with salt, pepper, and optional red pepper flakes. Cook for 1 1/2–2 minutes per side until the shrimp turn pink and are cooked through.
- Finish the Dish:
- Stir in lemon juice and parsley. Toss the cooked pasta with the shrimp and sauce. If needed, add reserved pasta water to adjust the consistency.
- Serve Immediately:
- Plate the Shrimp Scampi and serve warm. Optionally, pair with crusty bread for dipping in the sauce.
