For the Pasta and Shrimp:

  • 12 oz linguine (or your preferred pasta)
  • 1 1/2 lbs uncooked extra-large shrimp (peeled and deveined)

For the Sauce:

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced (about 4 teaspoons)
  • 1/2 cup dry white wine (or low-sodium chicken broth)
  • Salt and freshly ground black pepper, to taste
  • 1/8 teaspoon red pepper flakes (optional, for a spicy kick)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook the Pasta:
    • Cook linguine according to package instructions. Reserve 1/4 cup of pasta water before draining, in case you need to thin the sauce later.
  2. Prepare the Sauce:
    • In a 12-inch skillet over medium heat, melt butter with olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.
  3. Simmer the Sauce:
    • Pour in the white wine (or chicken broth) and simmer for 2–3 minutes until the liquid reduces by half.
  4. Cook the Shrimp:
    • Add shrimp to the skillet in an even layer. Season with salt, pepper, and optional red pepper flakes. Cook for 1 1/2–2 minutes per side until the shrimp turn pink and are cooked through.
  5. Finish the Dish:
    • Stir in lemon juice and parsley. Toss the cooked pasta with the shrimp and sauce. If needed, add reserved pasta water to adjust the consistency.
  6. Serve Immediately:
    • Plate the Shrimp Scampi and serve warm. Optionally, pair with crusty bread for dipping in the sauce.
