For the Ravioli:

  • 24 wonton wrappers
  • 1 egg white, lightly beaten (for sealing)

For the Saffron Broth:

  • 2 cups seafood stock
  • 1/4 teaspoon saffron threads
  • 1/4 cup white wine
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • Pinch of salt

Garnish:

  • Fresh lemon juice (to taste)
  • Chopped chives

Instructions

  1. Prepare the Lobster Filling:
    • Melt butter in a skillet over medium heat. Add garlic and sauté until fragrant.
    • Stir in lobster meat, white wine, salt, and pepper. Cook for 2-3 minutes, then mix in chives. Set aside to cool.
  2. Assemble the Ravioli:
    • Lay out the wonton wrappers on a clean surface. Place a small spoonful of lobster filling in the center of each wrapper.
    • Brush the edges with egg white, fold to seal, and press tightly to prevent leaks.
  3. Prepare the Saffron Broth:
    • In a saucepan, combine seafood stock, saffron threads, white wine, garlic, and salt. Bring to a simmer over medium heat.
    • Stir in butter and keep warm.
  4. Cook the Ravioli:
    • Gently simmer the ravioli in the saffron broth for 3-4 minutes, or until they float to the surface.
  5. Serve:
    • Divide the ravioli among plates or bowls, ladle the saffron broth over them, and garnish with fresh lemon juice and chopped chives.
