  • 6 slices bacon
  • 1 pound maple breakfast sausage
  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 cup Colby Jack cheese, shredded
  • 6 croissants, sliced open
  • Chives, minced (for garnish)

For the Maple Mustard Sauce:

  • 2 tablespoons mayonnaise
  • 2 tablespoons mustard (or Dijon mustard)
  • 2 tablespoons real maple syrup

Instructions

1. Prepare the Maple Mustard Sauce:

  • In a small bowl, whisk together mayonnaise, mustard, and maple syrup until smooth. Set aside.

2. Cook the Bacon and Sausage:

  • Preheat oven to 420°F. Arrange bacon slices on a parchment-lined baking sheet and bake for 10–15 minutes until crisp.
  • Shape the sausage into thin rectangles to fit the croissant. Cook in a skillet over medium heat for 7–8 minutes per side.

3. Scramble the Eggs:

  • Beat eggs with milk and season with salt and pepper to taste.
  • Cook over medium heat, stirring frequently, until fluffy and cooked through.

4. Toast the Croissants:

  • Slice croissants open and lightly toast under a broiler until warm and slightly crisp.

5. Assemble the Sandwiches:

  • Spread maple mustard sauce on each half of the croissant.
  • Layer scrambled eggs, a sausage piece, crispy bacon, and shredded cheese on the bottom half.
  • Garnish with minced chives and top with the other half of the croissant.
