  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 1 celery stalk, chopped
  • 1 medium zucchini, chopped
  • 1 small head of cabbage, shredded
  • 1 (14.5 oz) can diced tomatoes, with juice
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/2 cup fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes until the vegetables soften.
  2. Add zucchini and shredded cabbage. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in diced tomatoes (with juice), vegetable broth, thyme, basil, oregano, salt, and pepper. Bring the mixture to a boil.
  4. Reduce heat to low and simmer for 25-30 minutes, or until the vegetables are tender and flavors meld together.
  5. Taste the soup and adjust seasoning as needed.
  6. Remove from heat and stir in fresh parsley if desired before serving.
