- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes until the vegetables soften.
- Add zucchini and shredded cabbage. Cook for an additional 5 minutes, stirring occasionally.
- Stir in diced tomatoes (with juice), vegetable broth, thyme, basil, oregano, salt, and pepper. Bring the mixture to a boil.
- Reduce heat to low and simmer for 25-30 minutes, or until the vegetables are tender and flavors meld together.
- Taste the soup and adjust seasoning as needed.
- Remove from heat and stir in fresh parsley if desired before serving.
