1¼ lbs baby red potatoes, halved or quartered if large
1 lb medium carrots, scrubbed and cut into 2-inch pieces (thicker portions halved)
3 tablespoons olive oil, divided
1 tablespoon minced fresh thyme
1 tablespoon minced fresh rosemary
Salt and freshly ground black pepper, to taste
12 oz green beans, trimmed and halved
1½ tablespoons minced garlic (about 4 cloves)
Directions
Step 1: Preheat the oven to 400°F (200°C).
Step 2: In a large bowl, toss the potatoes and carrots with 2½ tablespoons of olive oil, thyme, rosemary, salt, and pepper until evenly coated.
Step 3: Spread the seasoned vegetables on a rimmed 18×13-inch baking sheet in a single layer. Roast for 20 minutes.
