- 8 large flour tortillas
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 cup cooked chicken (optional)
- 1/4 cup chopped onions
- 1/4 cup chopped bell peppers
- 1/4 cup sour cream (optional)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Lay 4 tortillas on a baking sheet.
- Evenly spread the shredded cheese, cooked chicken (if using), chopped onions, and chopped bell peppers over the tortillas. Sprinkle with salt and pepper.
- Place the remaining 4 tortillas on top to form quesadillas.
- Brush the tops of the quesadillas with olive oil.
- Bake for 8–10 minutes, flipping halfway through, until the tortillas are golden and crispy.
