  • 200g (7 oz) streaky bacon, chopped
  • 2 medium courgettes (zucchini), sliced
  • 2 cloves garlic, minced
  • 200ml (7 fl oz) double cream
  • 100g (3.5 oz) grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook Pasta: Prepare the pasta according to package instructions, drain, and set aside.
  2. Cook Bacon: In a large frying pan, cook the chopped bacon over medium heat until crispy, about 5-6 minutes. Remove and set aside.
  3. Sauté Garlic: Using the same pan, sauté the minced garlic for 1-2 minutes until fragrant.
  4. Add Courgettes: Add the sliced courgettes to the pan and cook for about 5 minutes, stirring occasionally until tender.
  5. Make the Sauce: Lower the heat and pour in the double cream, stirring until heated through. Mix in the grated Parmesan cheese and stir until the sauce becomes smooth and creamy.
  6. Season and Combine: Season the sauce with salt and pepper to taste. Combine the cooked pasta with the creamy courgette and bacon sauce, stirring to coat evenly.
