  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup olive oil (for frying)
  • Fresh basil or parsley for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken:
    • Pound chicken breasts to an even thickness using a meat mallet.
    • Season both sides with salt and pepper.
  2. Bread the Chicken:
    • Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan.
    • Dredge each chicken breast in the flour, then dip in the eggs, and finally coat in the breadcrumb mixture.
  3. Pan-Fry the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Cook the breaded chicken for 3–4 minutes per side, until golden brown. Transfer to a plate lined with paper towels.
  4. Assemble the Dish:
    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of marinara sauce on the bottom of a baking dish.
    • Arrange the fried chicken breasts in the dish, spoon marinara sauce over each piece, and top with shredded mozzarella.
  5. Bake:
    • Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly and the chicken is fully cooked (internal temperature reaches 165°F/74°C).
  6. Serve:
    • Garnish with fresh basil or parsley and serve hot. Pair with pasta, salad, or roasted vegetables for a complete meal.
