- For the Pasta:
- 8 oz linguine or fettuccine
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 2 garlic cloves, minced
- 1/4 cup white wine (optional)
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon tomato paste
- 1/4 teaspoon crushed red pepper flakes
- Fresh parsley and basil for garnish (optional)
Instructions
- Prepare the Pasta:
- Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- Season and Cook the Shrimp:
- Toss shrimp with Cajun seasoning, ensuring even coating.
- Heat olive oil in a large skillet over medium-high heat. Sear shrimp for 1–2 minutes per side until pink and cooked through. Remove and set aside.
- Make the Sauce:
- In the same skillet, melt butter and sauté garlic until fragrant (about 1 minute).
- Deglaze the pan with white wine, scraping up any browned bits, and let it reduce by half.
- Stir in heavy cream, tomato paste, and crushed red pepper flakes. Simmer for 2–3 minutes.
- Combine Ingredients:
- Stir in Parmesan cheese and reserved pasta water to thicken the sauce.
- Return shrimp to the skillet and toss to coat. Add the cooked pasta and mix until fully combined.
- Garnish and Serve:
- Top with fresh parsley and basil, if desired. Serve immediately with crusty bread or a side salad.
